Potato Leek with Chicken & Mushroom Sauté

What You'll Need

  • 2 tbsp. Spectrum® Canola Oil
  • 1 lb. chicken tenders, cut in halves
  • 10 oz. assorted mushrooms, sliced
  • 3 cloves garlic, roughly chopped
  • 1 C. Imagine® Organic Creamy Potato Leek Soup
  • 1/4 C. fresh chives, chopped
  • kosher salt & freshly ground black pepper
  • lemon wedges

How to Make

  1. In a large skillet, heat the oil.
  2. Sear chicken until browned. Then turn the chicken and add in the mushrooms. Sauté until mushrooms are wilted, about 4 minutes.
  3. Add in the garlic and Imagine® Organic Potato Leek Soup; simmer for 3 - 4 minutes until heated through.
  4. Stir in chives and season as desired with salt and pepper. Serve with lemon wedges.
