- 1 small onion, diced (approx. ¼ cup)
- 1 cup white beans, cooked/canned
- ½ cup zucchini, diced
- ¼ cup tomato, peeled, diced and seeded
- 1 tbsp. garlic, chopped
- 4 tbsp. Spectrum Naturals® Organic Extra Virgin Olive Oil
- 4 cups Imagine® Low Sodium Organic Vegetable Broth
- 2 tbsp. pesto (store bought, high quality)
- Sauté onion and garlic in olive oil over low heat until soft.
- Add beans, tomato, zucchini and broth and bring to a boil.
- Stir in pesto, then season to taste.
- Garnish with parmesan cheese and serve warm.
