- 2 tbsp. Spectrum® Olive Oil
- 1 small white onion, diced medium
- 3 cloves garlic, chopped
- 1 cup long grain white rice
- 1 lime, zested and juiced
- 2 cups Imagine® Organic Vegetable Broth
- 1/2 bunch scallions, cut to 1/4-inch pieces
- 8 cherry tomatoes, halved
- 1/3 cup cilantro, roughly chopped
- kosher salt & ground black pepper
- Pour oil into a large saucepot. Add in the onions & garlic. Cook 4 - 6 minutes until onions are translucent.
- Stir in the rice and lime zest. Pour in the broth and half the lime juice.
- Bring to a boil, reduce heat to very low and cover. Cook 15 minutes. Allow to rest 5 minutes.
- Uncover and fluff with a fork. Stir in the scallions, tomatoes, reserved lime juice and cilantro. Season with salt and pepper as desired.
- Serve hot, with an entrée created with Imagine® Organic Latin Veracruz Culinary Simmer Sauce.
