- 2 cups Imagine® Vegetable Broth
- 1 cup basmati rice, rinsed until water runs clear, soaked in cold water 15 minutes
- 1 lime, zested & juiced
- kosher salt & ground black pepper
- 1/3 cup sliced almonds, oven toasted
- 3 scallions, diced small, about 1 cup
- 1/3 cup cilantro, roughly chopped
- 1 tsp. Spectrum® Toasted Sesame Oil
- In a large sauce pot, bring the broth to a boil.
- Stir in the basmati rice, lime zest & half the juice. Season with salt and pepper, as desired.
- Return to a boil, reduce heat to very low and cover. Cook 20 minutes. Allow to rest 5 minutes.
- Uncover and fluff with a fork. Stir in the almonds, scallions, cilantro and sesame oil.
- Serve hot, with an entrée dish prepared with Imagine® Thai Coconut Culinary Simmer Sauce.
