- 1 ½ C. orzo
- 4 C. Imagine® Organic Vegetable Broth or Imagine® Organic Chicken Broth
- 3 tbsp. unsalted butter
- 1 C. shiitake mushroom caps only, sliced
- ½ C. chives, chopped into 1" lengths
- Hain® Sea Salt and freshly ground coarse black pepper to taste
- ½ cup grated Parmesan
- 1 tsp. Spectrum® Olive Oil
- Cook orzo according to package directions, exchanging the water for broth.
- Cook until just tender. Drain orzo, toss in olive oil and keep warm.
- In a large skillet melt the butter over a medium high heat and sauté mushrooms until tender, about 3 minutes.
- Add the orzo and chives to the mushrooms.
- Season to taste, sprinkle parmesan on top and serve hot.
