- 1 lb. ground turkey
- 1/3 C. red sweet bell pepper, diced small
- 1/4 C. Italian parsley, roughly chopped
- 1 egg, lightly beaten
- 2 tbsp. parmesan cheese, grated
- 2 tbsp. seasoned breadcrumbs
- 1/2 tsp. poultry seasoning
- kosher salt and ground black pepper
- 17.3 oz carton Imagine® Organic Potato Quinoa & Spinach Soup
- In a medium bowl, mix the turkey with the bell peppers, parsley, egg, cheese, breadcrumbs, poultry seasoning, salt and pepper (as desired).
- Form into walnut sized meatballs and place in a greased casserole dish.
- Bake in a pre-heated oven at 375° F until meatballs set, about 15 minutes.
- Pour in the Imagine® Potato Quinoa & Spinach Soup and sprinkle about 2 tbsp. cheese on top.
- Raise the oven heat to 400° F and continue to bake for 15 more minutes until cooked through and golden brown on top.
- Serve hot with additional parmesan cheese on top - either grated or shaved.
