- 1/4 cup Spectrum® Olive Oil
- 1 lb. turkey cutlets, pounded thin
- kosher salt and ground black pepper
- 4 oz. sliced prosciutto, diced small
- 1 cup onion, diced small
- 1 tbsp. sage, chopped
- 1 ½ cups Imagine® Creamy Sweet Potato Soup
- 1/3 cup Italian parsley, roughly chopped
- In a large skillet heat oil.
- Season the cutlets with salt and pepper.
- Place in the hot oil, seasoned side down.
- Cook for 2 - 3 minutes until browned on each side.
- Remove from pan and keep warm.
- In the same pan, add in the prosciutto, onions and sage.
- Cook for 2 - 3 minutes.
- Pour in the Imagine® Sweet Potato Soup and adjust heat to medium.
- Bring to a simmer and cook until heated through.
- Season with salt and pepper, as desired.
- Add cutlets and parsley to the pan. Serve hot.
